This copycat Cracker Barrel recipe is one of my favorite things to make when camping. Eggless Blueberry Pancakes are the fluffiest pancakes that when served with a side of crispy bacon will be your go-to breakfast.

HOW TO MAKE FLUFFY BLUEBERRY EGGLESS PANCAKES ON THE BLACKSTONE

There is nothing like a good old-fashioned pancake recipe off a hot griddle topped with peanut butter and fresh blueberries.

Easy breakfasts are always at the top of my list. Just like the Blackstone Ice Cream French Toast, your family is going to love these.

I made the fluffy pancakes on the Blackstone griddle, however, you can also make them in a frying pan or on an electric griddle indoors for a perfect weekend breakfast.

HOW TO MAKE EGG FREE BLUEBERRY PANCAKES

Start by Preheating your Blackstone griddle to medium-high, non-stick pan or electric griddle. (if making in a frying pan, use melted butter over medium heat for best results.)

In a bowl mix dry ingredients, flour, and baking powder. Add milk and oil. Using an electric mixer beat the pancake batter for about 2-3 minutes until consistency is smooth.

Add blueberries and stir in for another minute.

Use cooking spray or drizzle a little bit of vegetable oil or olive oil on the griddle.

Pour the batter, and form 4-inch diameter pancakes.

Fry over medium-high heat until golden brown then flip and cook on another side for about 1 and ½ minutes.

Serve hot with maple syrup, lemon zest, and blueberries on top.

COMMON GRIDDLE ACCESSORIES USED MOST

  • Blackstone griddle – Ok, this is quite obvious. However, it doesn’t have to have the name Blackstone on it. Ours at home is from Sams Club.
  • Griddle Breakfast Kit – I picked this up at Lowes. Has everything you need for making breakfast. It includes Batter Dispenser, Bacon Press, and Two Egg Rings. The bacon press does double duty as you can use it for hamburgers too.
  • Squeeze bottles – You might not think you need to purchase a good set of squirt bottles. Until you get a shirt full of oil. I wish I had a video of when I went to squeeze the oil onto the griddle and the top popped off and ended up all over my shirt.
  • Heavy duty spatula – This works for pancakes, french toast, burgers, steaks, and more.
  • Aluminum Foil Drip Pans – These are a no-brainer. You need these for the back or you will have grease and oil all over. And no, you can’t save them to reuse. Bugs will get into it.

More Griddle Supplies You Need

  • Mesh Screen block – I didn’t think I needed this until half my food was ending up in the drip pan.
  • Wind guards – When I was seasoning my griddle, it wasn’t working out. Someone suggested wind guards. While I needed to get it done, I made some temporarily out of foil. I then ordered these and they work great. Be sure to order the right size for your Blackstone griddle.
  • Tongs – A good set of tongs are always handy for multiple reasons. In addition to flipping food, I use mine to hold the paper towels when the griddle is hot while spreading oil
  • Infrared Temperature Gun – This is great to have even for cooking indoors.
  • Cheese melting dome – You might not think you need one of these..but trust me. At some point you will be saying, I wish I would have bought a cheese-melting dome.
  • Blackstone Griddle Seasoning – This is a must especially when seasoning the Blackstone griddle. I have tried lard and everything else on my previous griddle and nothing works as well as this.
