And stuffed jalapenos have become one of my family’s favorite brisket recipes.

How to Make Texas Twinkie Recipe
Preheat the Blackstone grill to 375 degrees F.
Select large jalapeños and slice a little bit of the tops of the stem end.
With a sharp paring knife, slice a straight line down the backside and open the jalapeños.
Then carefully de-seed them with a small spoon to control the heat of jalapenos.
Rinse the jalapeños to clean them and stuff half of each with cream cheese, providing a sturdy base for the brisket.
Stuff the jalapeños with the beef brisket mixture, ensuring a generous filling. How much meat you use depends on the size of the jalapeno peppers.
Lay out a piece of bacon on a flat surface.
Wrap each jalapeño with bacon, securing it with toothpicks on both ends.
Place jalapenos on the Blackstone grill grate over indirect heat.
Cook for about 25-30 minutes, turning them occasionally for even heating.
The cooking time will vary depending on the heat of your grill and more.

- Oven: Preheat to 400°F and bake Twinkies on a baking sheet for 20-30 minutes until bacon is crisp.

Atomic Buffalo Turds

Ingredients
- 8 jalapenos sliced and de-seeded
- 8 slices thick-cut bacon
- 12 tbsp cream cheese room temp
- 2 c smoked brisket chopped or shredded
Instructions
- Start by preparing your jalapenos. When selecting your jalapenos at the store, just like they say in Texas “bigger is better”!
- I trim the top of the jalapeno off. Next, using a sharp pairing knife, slice a straight line down the backside of the jalapeno (it’s often the flat part). Using your fingers spread the jalapeno open.
- Grab your pairing knife and carefully de-seed the jalapeno. This is where all the heat is. If you want to leave the jalapeno a little spicy, leave the white rib portion and remove the seeds. Rinse your jalapenos under water to clean them and rinse any seeds away.
- Using a knife stuff half of the inside of the jalapeno with cream cheese. Ensure there is enough as this will help the brisket stick to and keep intact.
- Once the jalapenos have been stuffed with cream cheese it’s time to add the brisket.
- Take your shredded or chopped brisket and stuff each jalapeno.
- On a flat surface, lay out a slice of thick-cut bacon.
- Beginning at one side, secure the bacon to the jalapeno with a toothpick. Wrap the jalapeno with the bacon and secure the other end with another toothpick.
- When all of the jalapenos have been wrapped in bacon it’s now time to cook them.
- You can also choose to cook them in the oven, the smoker, or the air fryer.
Notes
BACON WRAPPED JALAPENO POPPERS OVEN COOKING:
Preheat your oven to 400°. Place the Texas Twinkies on a baking sheet (preferably on a wire rack with a baking sheet under to catch the drippings), this will allow the bacon to crisp up nicely. Bake for 20-30 minutes until the bacon has cooked through and is done to your liking.
SMOKER COOKING:
Preheat your smoker to 275°. Place the Texas Twinkies directly on the wire rack. Allow cooking for 60-90 minutes, until the bacon has cooked through.
AIR FRYER COOKING:
It’s no secret that I love my Air Fryer and I use it daily. While making a bunch of these in the air fryer will take some time, making just a few for an after-school snack is no problem at all.
Set your air fryer to 350 degrees F and cook for about 15-20 minutes. Place a couple of ends of bread at the bottom of the air fryer under the basket to absorb the bacon grease. It cuts down on smoke.
Be sure to keep a close eye on them, unless of course, you like the bacon burnt like my husband.
How to Reheat Jalapeno Poppers
You can place in the oven at 350 degrees F for about 10 minutes or in the air fryer at 350 for about 5 minutes.
They are not good reheated in the microwave. Just saying.
