What You’ll Need
- Corned Beef, chopped
- Sauerkraut, drained
- Shredded Swiss Cheese
- Pumpernickel bread
- Butter, softened
The amount of items needed depends on how big your pan is, how much you are making, and how much corned beef and sauerkraut you like.
It’s all a matter of preference.
You can also leave out the Thousand Island dressing for those that are not a fan of it.
How to Make the Easy Reuben Casserole
Start by gathering your ingredients.
Preheat the Blackstone on high. Once it’s warmed up, turn it down to medium.
Next, you want to butter your bread on both sides to grill it.
Lay your slices of corned beef on the Blackstone griddle to warm it up.
Chop your corned beef into chunks.
Place your drained sauerkraut on the griddle as well.
When your bread slices are toasted, place them in the disposable foil pan.
Next, spread out the Thousand Island dressing on top of the bread slices.
Top with the warmed sauerkraut, and corned beef.
Spread your shredded Swiss cheese across the top.
Squirt more Thousand Island Dressing across the top of the Reuben casserole.
I like to place the pan on a rack so it doesn’t burn over indirect heat (I turn off one side and place the pan on the other side.) to melt the cheese.
Cover with a dome lid for a couple of minutes.
Remove from Blackstone griddle and serve.
