HAWAIIAN CHICKEN FRIED RICE INGREDIENTS
- Boneless Skinless Chicken Breast
- Uncle Bens Ready Rice (white rice or jasmine rice)
- Large Onion sliced
- Green Pepper cut into strips
- Orange Pepper cut into strips
- Red Bell Pepper cut into strips
- Butter
- Soy Sauce
- Teriyaki Sauce
- Sesame Oil
- Sesame seeds (optional)
- Avocado, Extra Virgin Olive Oil, vegetable oil, or your favorite cooking oil (I prefer Avocado Oil because it has a high smoke point!)
- Whole Pineapple

COMMON GRIDDLE ACCESSORIES USED MOST
- Blackstone griddle – Ok, this is quite obvious. It can be any type of flat top grill. It doesn’t have to have the name Blackstone on it. Ours at home is from Sams Club.
- Griddle Breakfast Kit – I picked this up at Lowes. Has everything you need for making breakfast. It includes Batter Dispenser, Bacon Press, and Two Egg Rings. The bacon press does double duty as you can use it for hamburgers too.
- Squeeze bottles – You might not think you need to purchase a good set of squirt bottles. Until you get a shirt full of oil. I wish I had a video of when I went to squeeze the oil onto the griddle and the top popped off and ended up all over my shirt.
- Heavy-duty spatula – This works for pancakes, french toast, burgers, steaks, and more.
- Aluminum Foil Drip Pans – These are a no-brainer. You need these for the back or you will have grease and oil all over. And no, you can’t save them to reuse. Bugs will get into it.
HOW TO MAKE A DELICIOUSLY TROPICAL MEAL
THE NIGHT BEFORE
The first step to making Pineapple Chicken Fried Rice is to prepare the rice the day before.
You can use pre-cooked rice if you have some leftover rice in the fridge, or you can cook a fresh batch using a rice cooker following the package instructions.
Afterward, cut boneless, skinless chicken breasts into bite-sized pieces.
Place them in a plastic ziplock bag and pour in some teriyaki sauce to cover the chicken.
Make sure that all the surfaces of the meat are coated, then place the plastic bag in the refrigerator overnight.
During the night before, you might also want to prepare the pineapples.
Cut your pineapples in half lengthwise and remove the insides so you can use the shells as bowls later on.
Cut the pineapple meat into smaller pieces and set aside.
Alternatively, you can also make some Fireball Pineapples the night before with a can of pineapple rings.
We use the Grilled Fireball Pineapples for a lot of things such as our Grilled Pineapple Upside Down Cake. Yum!
I like to use at least a tablespoon of pineapple juice mixed into the chicken and rice for added flavor.
Let them marinate in the fridge overnight for an added kick of flavor.
MORE GRIDDLE SUPPLIES YOU NEED
- Mesh Screen block – I didn’t think I needed this until half my food was ending up in the drip pan.
- Wind guards – When I was seasoning my griddle, it wasn’t working out. Someone suggested wind guards. While I needed to get it done, I made some temporarily out of foil. I then ordered these and they work great. Be sure to order the right size for your Blackstone grill.
- Tongs – A good set of tongs are always handy for multiple reasons. In addition to flipping food, I use mine to hold the paper towels when the griddle is hot while spreading oil
- Infrared Temperature Gun – This is great to have even for cooking indoors.
- Cheese melting dome – You might not think you need one of these..but trust me. At some point you will be saying, I wish I would have bought a cheese-melting dome.
- Blackstone Griddle Seasoning – This is a must especially when seasoning the Blackstone griddle. I have tried lard and everything else on my previous griddle and nothing works as well as this.
THE DAY OF
On the day of cooking the easy Blackstone chicken, preheat your Blackstone flat top griddle to medium-high heat.
Slice some onions and peppers and place them on one side of the griddle cooking surface.
Use either Extra Virgin Olive Oil or Avocado Oil to turn and cook the vegetables until they are tender-crisp.
Cook the marinated chicken pieces on the cooler side of the griddle until they are browned and cooked through.
When done, remove the chicken from the griddle and set them aside.
Next, spread some sesame oil on the cooler side of the grill on medium high heat and dump the cold rice on the Blackstone’s surface on low.
Cut up the butter and place on top of the rice as it’s cooking.
Add Add some teriyaki sauce and soy sauce to the rice and stir them over the griddle.
At the same time, place your pineapple halves face down to grill them.
Once the rice is heated through and golden brown, add in the cooked vegetables, chicken, and pineapple chunks on the griddle and continue the cooking process over medium heat.
Mix all the ingredients together for a few minutes, adding more teriyaki and soy sauce as needed.
When everything is heated through and fully cooked, you are ready to serve the Pineapple Chicken Fried Rice.
Carefully spoon the Pineapple Chicken Fried Rice into the pineapple shell or serving dish and enjoy your tropical feast.
Top with green onions.
Store any leftover fried rice in an airtight container.
This family favorite can also be cooked in a frying pan or large wok.

Instructions
THE NIGHT BEFORE

- Cut your pineapples in half the long way and remove the guts.
- Cut into bite-size chunks and set aside.
- You can either do this the day of or make Fireball Pineapples to use in the recipe as I did the night before.
THE DAY OF
- Preheat the Blackstone griddle to medium-high.
- Place your sliced onions, and peppers on the other side of the griddle.
- Use Extra Virgin Olive Oil or Avocado Oil on them as you turn and cook them.
- Cook the chicken until it’s browned and cooked through.
- Remove from the griddle and set aside.
- Spread some sesame oil on the griddle and dump your cold rice on the griddle on low.
- Add teriyaki sauce and soy sauce. Sprinkle a little or a lot depending on your flavor preference.
- Cook until the veggies are tender-crisp.
- Then add the cooked chicken and pineapple chunks to the griddle.
- When the veggies, rice, chicken, and pineapple are heated and cooked, it’s time to mix them all together.
- Cook for a few minutes until everything is heated through. You can add more teriyaki and soy sauce if you like.
- Now it’s time to get fancy with your presentation.
- Carefully spoon the Pineapple Chicken Fried Rice into the pineapple shell and enjoy your tropical feast.
