As a lover of the great outdoors, one of my favorite things to do is camping.
There is nothing quite like getting away from the hustle and bustle of the city and breathing in the fresh mountain air.
And what’s more enjoyable than cooking up a storm outside, surrounded by nature?
One of the challenges of cooking when camping is not always having access to an oven.
But who says you need an oven to make a delicious cake?
With the help of a Blackstone griddle, you can whip up a yummy pineapple upside-down cake right there at your campsite!
If I’m camping, whether in a tent or an RV, I want to be able to make what I want, when I want!

It’s the principle of camping and being able to cook outside.

With just one bite of these glossy, golden pineapples, you can experience layers upon layers of intense flavor in the Caramelized Fireball Grilled Pineapple Upside Down Cake.
The sweet and crunchy pineapple slices that have been infused with cinnamon whisky, accompanied by rich melted butter mixed with brown sugar, give it an addictively spicy kick.

- Box Cake Mix (Yellow or Pineapple)
- Ingredients listed on cake mix box
- Fireball Grilled Pineapple
- Brown Sugar
- Butter
- Maraschino cherries

COMMON GRIDDLE ACCESSORIES USED MOST
- Blackstone griddle – Ok, this is quite obvious. However, it doesn’t have to have the name Blackstone on it. Ours at home is from Sams Club.
- Griddle Breakfast Kit – I picked this up at Lowes. Has everything you need for making breakfast. It includes Batter Dispenser, Bacon Press, and Two Egg Rings. The bacon press does double duty as you can use it for hamburgers too.
- Squeeze bottles – You might not think you need to purchase a good set of squirt bottles. Until you get a shirt full of oil. I wish I had a video of when I went to squeeze the oil onto the griddle and the top popped off and ended up all over my shirt.
- Heavy duty spatula – This works for pancakes, french toast, burgers, steaks, and more.
- Aluminum Foil Drip Pans – These are a no-brainer. You need these for the back or you will have grease and oil all over. And no, you can’t save them to reuse. Bugs will get into it.
More Griddle Supplies You Need
- Mesh Screen block – I didn’t think I needed this until half my food was ending up in the drip pan.
- Wind guards – When I was seasoning my griddle, it wasn’t working out. Someone suggested wind guards. While I needed to get it done, I made some temporarily out of foil. I then ordered these and they work great. Be sure to order the right size for your Blackstone griddle.
- Tongs – A good set of tongs are always handy for multiple reasons. In addition to flipping food, I use mine to hold the paper towels when the griddle is hot while spreading oil
- Infrared Temperature Gun – This is great to have even for cooking indoors.
- Cheese melting dome – You might not think you need one of these..but trust me. At some point you will be saying, I wish I would have bought a cheese-melting dome.
- Blackstone Griddle Seasoning – This is a must especially when seasoning the Blackstone griddle. I have tried lard and everything else on my previous griddle and nothing works as well as this.
How to Make Fireball Pineapple Upside-Down Cake on the Blackstone Griddle
Preparing the Pineapples
Prepare the pineapple slices according to the directions for Blackstone Grilled Fireball Pineapple.
Preparing the Cake
Prepare the cake mix according to the package instructions using the leftover Fireball Whisky from the pineapples in place of the water.
Pour the melted butter into the pan and add the brown sugar. Mix together and spread evenly. You can tell where I missed a spot as it stuck to the pan when I flipped the pan at the end. No big deal though.
Arrange your caramelized pineapple slices on top of the brown sugar and butter mixture.
Slice your maraschino cherries in half and place them in the center of the pineapple slices with the flat part up and facing you.
Pour the batter over the pineapple slices evenly.
Baking the Cake
Fire up your Blackstone griddle and preheat to a low temperature, approximately 250 degrees F.
Place a cooling rack on the grill and set your cake pan on top of it.
Cover the cake and time it for 10 minutes. If you don’t have a cover, you can make one with a couple of aluminum pans. I used my hamburger press to hold them down.
After 10 minutes, uncover it and check it. Turn a quarter turn and grill for another 10 minutes. Use BBQ gloves to turn the pan. It will be HOT!
Check after another 10 minutes and turn another quarter turn for another 10 minutes.
After 30 minutes, the center should be firm. If it looks like it needs a little more, turn another quarter turn and check it after another 10 minutes.
The cake is done when it is golden brown and a toothpick inserted in the middle comes out clean.
When the Cake is Done
Finish off by flipping the cake onto a plate so that the pineapple slices are on top.
Serve your Caramelized Fireball Pineapple Upside-Down Cake warm, with a scoop of vanilla ice cream.
Cut into 12 slices.

There are many factors that determine how long the cake needs to bake.
- the thickness of the aluminum pan
- size of grill
- wind affects the flame
- distance of the rack from the griddle
Don’t get discouraged if it’s taking a little longer than expected. It is well worth the wait in my opinion.
And no one will believe you cooked this on a Blackstone griddle!
